As its name says (from the Latin "Primitivus" which means “the first to ripen”), all of the phases of maturation of Primitivo occur early, from flowering to coloring, so it is one of the first grapes to be harvested in Italy, that is to say in August. Singular peculiarity is the production of "racemi", which are small bunches grown on secondary branches. The raceme mature about 20-30 days after the harvest of the main bunches and this means that can be obtained two different harvests, one between the end of August and the first half of September and a second one from the end of September and the first half October.
