The production of this wine begins in the vineyard, submitting the vines to exhaustive controls. Grapes are handpicked, and only the healthy bunches with an optimum ripeness are selected. Grapes are destemmed and gently crushed, and the paste goes through a long maceration-fermentation under controlled temperature, using an exclusive system of energetic pumping to increase the extract. Later the malolactic fermentation takes place. Ageing in American oak barrel for a minimum of 6 months and in bottle till release.
