"This wine is an homage to Paul Bouchard who had a vision of applying Burgundian expertise to other regions in France. This is 100% pinot noir with grapes harvested from the Le Gard and Le Hérault areas of the Languedoc, delivering a great diversity of subsoils. The approach is rather Burgundian in terms of vinification with a long maceration period including punchdowns and pumping over. There is partial ageing in Burgundy barrels for several months with 15% new oak to bring roundness and complexity. The nose is aromatically expressive with notes of red and black fruits. The palate is unctuous, well-structured with noticeably present tannins and slight herbaceous notes and blackcurrant."
