Collector Wines produces small quantities of table wine. Grapes are farmed on the characteristic lean pink granites and reddish shale loams of the Canberra District. The wines are hand-made for balance, character and depth of flavour. Their wine is made near Collector, on the Southern Tablelands of New South Wales.
The fruit was whole-bunch pressed and fermented in a combination of stainless steel (90%) and seasoned French oak (10%), on full solids. Fermentation was conducted at around 18 degrees celsius with two different yeast strains, before clarification and bottling.
