Collector Wines produces small quantities of table wine. Grapes are farmed on the characteristic lean pink granites and reddish shale loams of the Canberra District. The wines are hand-made for balance, character and depth of flavour. Their wine is made near Collector, on the Southern Tablelands of New South Wales.

The fruit was whole-bunch pressed and fermented in a combination of stainless steel (90%) and seasoned French oak (10%), on full solids.  Fermentation was conducted at around 18 degrees celsius with two different yeast strains, before clarification and bottling.

Notes on the 2019 vintage:

"Excellent concentration of fruit, more than a little character and all the carry through the finish you could hope for. It's all brine, florals, nashi pears and apples, and it's very good." - 94 Points, Halliday Wine Companion

"Delicate hints of white flowers, lemon, herbs and almonds yield to a dry, crisp palate with citrus notes and a finish characterised by freshness and minerality.  Marries beautifully with soups, shellfish, fresh cheeses such as buffalo mozzarella and legume dishes." - Winery notes
