"Giusto Occhipinti of COS is a benchmark producer in the Vittoria appellation of Sicily, and certainly one of the most important, influential, producers in all of Sicily if not Italy as a whole. The winery was founded in 1980 by three friends, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. The initials of their last names form the winery’s name.
An orange wine from the very southern end of Italy. A blend of 50% Grecanico (the Sicilian name for Garganega) and 50% Insolia, sourced from the estate vineyards in Fontane and Bastonaca in Vittoria. Farming is organic, grapes are hand harvested. Spontaneous fermentation and 7 to 10 days of skin contact in concrete tanks.
"Structured, tea-like skin-contact white wine from the original Sicilian natural winemakers. There is a lot of subtlety at play here, on opening the aromas are shy - this is a wine we recommend you open early or decant to let it fully open up. But nor is this a wine with heady aromatics; more the deep, savoury style with fine, expertly integrated tannins and balanced bitterness. Floral notes, like jasmine, are delicate and there is that dried apricot fruit and salted almond mineral note that we associate so closely with our favourite wines of Sicily. A proper, grown-up orange wine with absolutely everything in check."
