This Reserva Cava is made from the typical Cava grapes Marcebo and Xaral.lo. The Macabeo vineyards come from the La Vega region in Utiel-Requeña with an average age of 30 years. The Xarel.lo vineyards are located in the La Loma region. Both vineyards are at the respectable height of 750 m on clay limestone soil. The height (read freshness) makes the wines and cavas of dominio de le Vega high quality.
The varieties and plots are picked separately and cooled to a low temperature before they are lightly bruised. Only free-flow juice is used for this great Reserva Cava Brut Nature. After deciding on the coupage of the different varieties and plots, bottling takes place during the first months of the year. A second fermentation and aging of at least 18 months takes place in complete peace in the basement of Dominio de la Vega at a low and constant temperature (Method Traditionelle)
The Authentique is a Brut Nature which means that it has no added sugars and a maximum of 3 gr. has residual sugars. So this is for lovers (like us) of a dry Cava. The Cava wine has a very light yellow color and a very fine bubble (perlage). In the nose, the wine is provocative and fresh with in full harmony fresh floral, a bit of whiteboard and citrus fruits. In the mouth the Authentique Cava is very pleasant. The wine is sparkling but very refined without it bubbling out of your mouth and a somewhat creamy mouthfeel. We also taste and smell slightly salty notes and in the distance some yeast and brioche due to the long ripening on his lees. This is a great aperitif and a great companion to Fruit du Mer, Oysters but also very tasty with Asian (spicy) dishes and Ideal with tapas.
Dominio de la Vega produces wines and champagnes in a traditional, most natural way, with respect for the environment and without using all kinds of aggressive treatments or industrial processes. The grapes are always harvested in the dark and then stored in a dark, serene place where they can go through the correct aging period in peace. The caves of Dominio de la Vega are produced according to the méthode traditionnelle or méthode champenoise.
