Dominio de la Vega Bobal En Calma 2017 (Valencia, Spain) "...cherry, redcurrant, vanilla..."
Depending on the degree of maturation, the plots are harvested separately.Subsequently, an initial maceration is carried out at 10ºC during the first days followed by its fermentation with gentle pumping over.Once the thick lees are eliminated, the wine is transferred to the barrel to carry out the malolactic fermentation.
After being aged in a 9-month barrel, the wine is bottled and the wine will rest in the cellar for the corresponding time to finish its refining.
"Cherry red with violet tones. Intense aromas of red fruits (cherry, blackberry, redcurrant) accompanied by notes of vanilla, toasted and spicy. A mouthfeel which is fresh, fruity and soft." - winemaker
