This wine is named after Bond Road which adjoins the Wilgha Vineyard where the Hollick Chardonnay vineyard is situated. The cool nights experienced in our region are due to due to the up welling of cold currents offshore in the Great Southern Ocean. These cool nights contribute to the length of the growing period for Chardonnay in our vineyards. This long cool growing period allows for gradual flavour development and elegance in the resulting wines.

A cool growing season and above average winter rains leading into the 2017 vintage saw the region return to what could be best described as a more traditional Coonawarra vintage. The cooler conditions resulted in bud burst being delayed by up to three weeks, with flowering two weeks later. A mild Summer followed, with a welcome spell of hot days in late January.

Free run juice was transferred to tank for overnight settling. To encourage richness and complexity of palate, light lees were transferred with the juice to fine grain French oak barrels. Further flavour development was achieved through 10 months of yeast lees contact and regular stirring. Partial malo-lactic fermentation contributes some complexity to a fine cool climate Chardonnay.

"This Coonawarra Chardonnay has a complex palate with fresh, vibrant green apple, pear, melon and nectarine primary fruit flavours. A small portion of the wine is encouraged to undergo male-lactic fermentation, which adds softness to the mouth-feel and a slight buttery note to the nose and palate. The resulting Hollick Coonawarra Bond Road Chardonnay is complex and restrained, with a crisp acid finish."
