Jilyara 'Heath Road' Cabernet Sauvignon 2020 (Margaret River, Western Australia)



A family-owned and operated vineyard in Wilyabrup, Margaret River. Planted in 1996 by the Cotterell family, the nine hectare vineyard grows predominantly Cabernet Sauvignon, but also Malbec, Petit Verdot, Merlot and Sauvignon Blanc.  The fruit is managed by hand and owner Craig Cotterell does all the vineyard work himself to ensure a sound and disease-free vineyard. Craig has managed every aspect of the vineyard since the beginning and strives to grow grapes of superior quality. Wines are made by Kate Morgan.

The grapes were crushed and pressed immediately after the fruit was harvested in the night, then settled to clarify the juice. The juice cold fermented in stainless steel for 14 days at 12-15C, with selected yeast. It was then fermented in French oak and left on lees and stirred to add further complexity to the style.

"with 5/6% merlot/petit verdot. A mix of clones (Houghton and 337), up to 18 days on skins, fermented in tank, matured in French oak for 18 months (15% new). Tasted next to the Honeycomb Corner cabernet ($22), and this is immediately plusher, softer and more dense, with better concentration and more harmonious interplay between tannin and fruit. The cassis and blackberry are cushioned by bay and saltbush, the saline acidity bringing everything together. Very smart, very good value. Will age." - 94 Points, James Halliday

"Garnet red with a cherry-red hue. Lifted aromatics of dried roses, violets, cherry, and cigar box. The palate is full of dark fruits including mulberry, blackcurrant & morello cherry, and savoury notes of olive tapenade and bay leaf. Dusty oak and fine tannin frame the wine and draw it though to a long, choc liquorice finish." - Winery Notes
