The vines grow in quartz rich sandy loams formed from the underlying 500 million year old Schist bedrock. Made from the 16 individual Chardonnay vineyards on the estate, 5 vineyard components were selected to make this wine. Harvesting occurred at optimal fruit flavour over a two week period. Picking the grapes in the cool of early morning followed by a gentle pressing, a long cool 4 week fermentation with natural cultured yeast, helps retain maximum grape flavors. This unoaked wine shows the crispness and concentration of ripe Chardonnay.
