Picked into 10kg baskets and gently whole-bunch pressed. Settled warm and racked with solids to a combination of 3 & 4 year old smaller format baroques as well as larger puncheons for fermentation by wild yeasts. Stirred fortnightly for 10 months. Blended in tank and lightly fined before bottling.
