Prosper Maufoux 'Reference' Bourgogne Rouge 2019 (Burgundy, France) "...rose, raspberry, cherry..."
For the Burgundy Pinot Noir, typicity is of great importance. This wine is created from 100 % Pinot Noir, the grapes come from a blend of terroir from Côte d’Or, Saône et Loire and Yonne. The result is a typical Pinot Noir, on the fruit and finesse, but with an asserted character that makes you want to discover more.
The grapes are sorted, de-stemmed and then delicately conveyed into the vat on a conveyor belt, without pumping. Before fermentation, we proceed to a cold maceration at 10°C for 4 to 5 days. The vatting lasts between 18 and 20 days, during which we proceed to daily punching of the cap. The wine is then put into barrels and malolactic fermentation is carried out entirety.
"Classic elegant cherry color with lots of burgundy character in the nose… fresh and charming scent of roses, raspberries, forest strawberries and red cherries that go nicely in the span of forest floor, mocha and vanilla. In the mouth soft and juicy with nice fruit concentration as well as a pleasant imprint of tannins in the long, soft finish. Drink now or hold for 4-5 years."
