Here, the vines stand on deep clay soils, which ensure optimal supply of the plants at all times. As in classical Burgundy, the high limestone content in the subsoil guarantees the highest degree of character and finesse.
Only fully ripe, healthy grapes were carefully selected by hand, freed from the stem and fermented on the mash. After two weeks of service, they were gently pressed.
The wine was stored in wooden barrels for almost a year after malolactic fermentation. Large, traditional Pfälzer piece barrels (1200 l) were used. This preserves the natural cherry fruit of the wine, and at the same time makes the wine rounder and more harmonious.
