The Cava Idilicum Brut is made from Macabeo grapes. A delicious cava that is also very friendly in price. The Spanish winery Dominio de la Vega is the producer. This is the Extra Brut version of our most popular cava so drier and tighter than the normal Iddilicum. A tasty quality cava this Idilicum Extra Brut that is also very friendly in price and belongs to our most popular Cava. This Idilicum has a pale yellow color with green highlights and fine, elegant bubbles. Fine aromatic notes of fruit (apple and citrus) and also of white bread. On the palate this cava has very well integrated and lively carbon dioxide with light baking aromas and is fresh and perfectly balanced and nice and dry and mineral.
The Macabeo vines have an average age of 25 years and grow in a vineyard at a height of 750 meters on a clay-limestone soil. This is unique for "cava grapes" and partly explains the freshness and elegance. The grapes are picked carefully and by hand at the beginning of September, with an initial selection already taking place so that only the best grapes are used. The cava stays in contact with the lees (sur lie) for about 10 months for more complexity.
Dominio de la Vega produces wines and champagnes in a traditional, most natural way, with respect for the environment and without using all kinds of aggressive treatments or industrial processes. The grapes are always harvested in the dark and then stored in a dark, serene place where they can go through the correct aging period in peace. The cavas from Dominio de la Vega are produced according to the méthode traditionnelle or méthode champenoise.
