An effusive sparkling wine with spicy green apple aromas which continue to a full, lengthy palate that adds a little slate and citrus.
Based primarily on Savagnin fruit blended with a little Sauvignon Blanc, it's made using the Petillant Naturel (Natural Sparkling) method - original grape juice was added back to the base wine for the secondary fermentation in bottle.
Unlike a methode traditionelle sparkling, we don't remove the sediment, and we don't add sugar.
It makes for a crisp, refreshing sparkling, and the lack of sugar allows the full delicious flavour profile of Savagnin to show through.
"88% savagnin, 12% sauvignon blanc. An above average pet nat (petillant naturel) style that shows just how vibrant, fresh and complex this old school approach to sparkling wine can be. It's a masterclass from talented Canberran maker Alex McKay. It takes a high degree of skill to do less in winemaking. Light golden tones, crushed Fuji apples, grapefruit pith, grilled lemon-citrus. Developing a light nuttiness on the palate with citrus long on the dry finish." - 92 Points, Jenni Port (Wine Companion)
