32% fermented and matured in a new French oak barrique for 7 months with the remaining portion fermented and matured in stainless steel
Handpicked grapes were whole bunch pressed to a barrique with the remaining portion being pressed to stainless steel. The barrique was fermented naturally with indigenous yeast and matured on lees for a further 7 months. Regular lees stirring was employed to help build structure, generosity and a subtle creaminess in the wine. The stainless steel portion was fermented at cool temperatures to retain freshness. The wine was then matured on fermentation lees for 7 months with regular lees stirring before being blended and bottled.
