The vineyards of Veneto are generally sloped and hilly with medium clay soils. Fruit from Villa Jolanda’s own vineyards and long term growers is hand harvested in the early hours of the morning to retain freshness and flavour.
The Prosecco grape is whole bunch pressed to ensure the clean varietal flavours are captured. After cold settling the juice is fermented cool in stainless steel tanks with selected yeast strains. The base wine is then blended and the secondary fermentation takes place resulting in a wine with fine persistent bead.
